<p>I bet you would love to get your family eating more fruits and vegetables (and yourself too!) The&nbsp; latest recommendation is 5 &#8211; 12 servings and I am pretty sure MOST people don&#39;t eat nearly that!</p>

<p><span style="font-size: small;"><img align="right" alt="5-12 servings a day" height="226" hspace="5" src="http://www.benaturallywell.com/blog/wp-content/uploads/fruitsveggies.jpg" width="340" />These days I don&#39;t find it difficult at all to personally get my recommended fruits and vegetables. My house is loaded with fresh produce of all descriptions. Just in fruits I have fresh watermelon, honey dew melon, cantaloupe, pears, apples (red delicious and granny smith), naval oranges, tangerines, blueberries, green and red grapes, bananas, a mango, black plums, nectarines, lemons, limes, avacado&#8230; and I am probably missing something. That&#39;s just fresh. I also have several bags of frozen fruits in the freezer (mostly berries).<br />

<p><span style="font-size: small;">I won&#39;t begin to list all the fresh vegetables I have on hand&#8230; I know I would miss a lot.&nbsp; Health is not, however, about what I eat today (or what my family eats today). health is about what we eat consistently over time. Each day of getting an abundance of fresh whole fruits and vegetables adds up to the grand total that will make a difference over the entire course of your life. It will affect how you feel, how you look, how you move, how you respond to viruses, how you fight off things like cancer. It is important that you pay attention to this now. It is not too late to start eating more fruits and vegetables. <br />
	</span></p>
<p><span style="font-size: small;">As a mom, I found a number of creative ways over the years to get extra servings of vegetables into meals and snacks. You know the obvious ways, i.e. salads, veggie side dishes, and fresh fruit snacks or desserts, but these can get boring or tedious.<br />
	</span></p>
<p><span style="font-size: small;">Here are some things that I have found make a big difference.<br />
	</span></p>
<ul>
<li><span style="font-size: small;">Use grated vegetables in pasta sauces &#8211; When I used a canned pasta sauce I always saute onions, garlic, fresh mushrooms, green and red peppers and add the sauce with or with out browned ground beef, but I ALSO grate several large carrots to put in. Carrots give the sauce a real fresh flavored lift but the tomato sauce disguises the carrot flavor. To this day my family does not know I put carrots in their pasta sauce.<br />
		</span></li>
<li><span style="font-size: small;">Grated vegetables are also good in meat loaf or hamburger patties.</span></li>
<li><span style="font-size: small;">When having spaghetti, grate a zuchini or 2 lengthwise and add it to the long noodles. If you peeled it they may not even know!</span></li>
<li><span style="font-size: small;">Mix grated vegetables (carrots, onions,&nbsp; into salad dressings or sour cream and use as a veggie or corn chip dip.<br />
		</span></li>
<li><span style="font-size: small;">Smoothies &#8211; Using fresh or frozen berries as a base throw in some flax seed oil, a banana, and some melon (water melon, honey dew or cantaloupe) Then for more liquid JUICE 2 large carrots per person, and 1 pear per person, to dump in the blender instead of water!<br />
		</span></li>
<li><span style="font-size: small;"><span>Semi-frozen strawberry yogurt- take a cup of frozen strawberries, 1 cup of strawberry yogurt, 2 scoops of protein powder. (I use URI&#39;s Orange Flavored Multi-meal) and 2 tablespoons on flax seed oil. Blend. Add just enough apple or orange juice (or water) so the berries blend) Pour into bowls. This is MUCH more delicious than ice cream and makes a wonderful breakfast for children who don&#39;t like to eat in the morning.<br />
		</span></span></li>
<li><span style="font-size: small;"><span>Make more casseroles. Tonight I cook chicken breasts. I took 4 large boneless, skinless breasts and chunked them, and baked them in a baking dish for 15 minutes at 375 degrees. The I chopped fresh new carrots, a head of broccoli, a small onion, some green beans, and mushrooms, mixed the whole thing in a bowl with a can of sodium reduced cream of mushroom soup, pored it all over the partially cooked chicken, and stirred it all up. Baked it for another 25 minutes and served it with a large salad of fresh vegetables. I let my family serve themselves but I live with teens. SO&#8230;.</span><br />
		</span></li>
<li><span style="font-size: small;"><span>Make it accessible&#8230; Veggies always fresh chopped and in serving sizes&#8230; with meals I put the large salad out and I get out their favorite salad dressings ad open the top and set it right next to the silverware, I always have</span></span><span style="font-size: medium;"><a href="http://www.benaturallywell.com/blog/2008/07/raw-tomato-salsa/" target="_self"><span style="font-size: small;"> fresh made salsa</span></a></span><span style="font-size: small;"><span> available and they will often scoop that up as a condiment or side dish. </span><br />
		</span></li>
<li><span style="font-size: small;"><span>Make fresh cobblers for dessert instead of pies. Lots of fruit in a very lightly greased baking dish topped with a crumble of equal parts raw oatmeal, almond meal, shaved coconut and a tablespoon of brown sugar. Add a bit of coconut oil to make a crumbly mixture and bake at 350 until fruit is soft and bubbly. If using apples or peaches sprinkle a bit of cinnamon. Berries may require a bit of your choice of sweetener. It is very fast to do something like this up and pop it in the oven after you take the casserole out. It is ready when your meal is done!</span><br />
		</span></li>
<li><span style="font-size: small;"><span>Wrap large lettuce leaves around sandwich filling instead of bread.</span></span></li>
<li><span style="font-size: small;"><span>And don&#39;t forget celery or carrot sticks spread with peanut butter. YUM! </span></span></li>
</ul>
<p>It is good to have the proper tools. I use pampered chef garlic press and veggie peelers, and I have a small electric food chopper, a 7 speed blender, and a Hamilton Beach Juicer, and some good sharp knives. I also have plenty of spices, herbs and seasonings.</p>
<p>The other night my teen age daughter actually ASKED for a vegetarian dinner.&nbsp; I had taken some pita breads, brushed them with olive oil and sprinkled them with garlic powder and sea salt and then baked them until lightly browned at 450 degrees. Then I served some home made salsa, a guacamole made with fresh avocado, juice of one lime, garlic clove crushed, and cilantro, and served both dips with the &quot;chips&quot; and some carrots, celery, cukes, broccoli, and cherry tomatoes.&nbsp; The ONLY reason she asked for this is because she LOVES the &quot;homemade nacho chips&quot;.</p>
<p>My rule of thumb is.. if having something they aren&#39;t crazy about, serve it with something they love!</p>

<h1>The Farmer&#8217;s Market in Summer</h1>
<p><img width="298" height="341" align="right" alt="Farmer's Market Produce" src="http://www.benaturallywell.com/blog/wp-content/uploads/farmers-market.jpg" />If you live in Canada like I do, or any other climate that has definite seasons, then you know ALL about looking forward to fresh produce at this time of year. It has been quite EASY to be vegan and raw over the last bit because of the bounty.</p>
<p>So here&#8217;s the update&#8230;. ALL vegan and ALMOST entirely raw now for 48 hours. AND I feel quite amazingly well. I&#8217;m not starving today either&#8230;. I have a theory about the whole hunger thing&#8230; I&#8217;ll tell you about that in a minute!</p>
<p>So back to my day yesterday&#8230;.<span id="more-29"></span> my raw oatmeal and raisin breakfast, a smoothie with some fresh made green juice from my juicer (cucumber, alfalfa sprouts, celery, spinach) mixed with whole blended fruits, some flax seed oil&#8230; delicious. A huge garden fresh salad topped with home-made salsa, and I did have a tomato soup that I will also add the recipe for that was so very good!&nbsp; I also drank some Waiora detox tea, and lots of clean ionized alkaline water.</p>
<p>II am so proud of myself&#8230;. it seems like such a little thing, and yet it has become very important to me, and journalling all of this has made it somehow easier!</p>
<p>So now&#8230; let me tell you my theory about hunger. I was watching a youtube video about healthy eating versus unhealthy eating, and the gal said something that OF COURSE I remembered, and made so much sense and everything kind of went &#8230; click click click&#8230; I mentioned the other day that I was really hungry. That with all the raw food I ws eating I was still finding myself hungry again. This video reminded me that hunger pangs are a sensation we feel because we require a certain nutrient. That nutrient may be water, or it may be vitamin C or A or whatever. It may be a combination of vitamins. So her suggestion was to first drink a big glass of water. There is no sense eating if your body is really asking for a drink.</p>
<p>She also went on to explain that when you are hungry and you eat a Big Mac meal&#8230; say a 1500 calorie meal that has lots of calories but they are low on nutritional value, so even though you have met your calorie requirement for the day, your body still needs more nutrient value, so it will signal again that you are hungry in a few short hours, and send ;craving&#8217; signals. If you continue to make poor choices, you can see how you can become overweight can&#8217;t you and yet still always be &quot;hungry&quot;.</p>
<p>So anyway&#8230; up until this morning I&#8217;ve been starving&#8230; Instead of reaching for empty calories I have just continued to eat fresh fruits and vegetable, and a few nuts. A couple of days I feel like I just ate from morning until night. I didn&#8217;t count calories. I just ate when I felt hungry and that was often, and I fed myself nothing but pure whole food nutrition. Today I am quite a bit less hungry. My theory&#8230;.. my body is getting used to all the fresh wholefood goodness and just totally stocked up on all of that goodness. I am pretty certain that my choices over the past few years have left my body lacking. (Imagine the shock!!) LOL</p>
<p>Anyway, tonight I am going to have some ocean perch (YES cooked) but the rest of my meal will be raw, and I am just going to enjoy the good feeling of putting wonderful, nourishing goodness into this body. I am finally beginning to understand how the people of&nbsp; North America can be both overweight and undernourished at the same time!</p>
<p>I&#8217;m off to cook my fish! I&#8217;ll be back later, Happy Saturday my friends! :-)</p>

<p>The freshest vegetables make the best salsa&#39;s you have ever tasted. Now, even my kids agree that jarred salsa&#39;s are dead tasting. You just can&#39;t beat fresh!</p>

<p><img align="right" alt="Raw Vegan Salsa" height="243" src="http://www.benaturallywell.com/blog/wp-content/uploads/salsa.jpg" width="305"> 4 cups chopped tomatoes &#8211; (plum are better because they are less juicy, but regular round ones have MUCH more flavor)</p>
<p>3 green onions, stalk and root chopped</p>
<p>1/4 cup each of red onion, green pepper and red pepper chopped</p>
<p>1 garlic clove finely chopped (or pushed in the press)</p>
<p>1-4 jalapeno peppers finely chopped (a note that the HEAT in a jalopeno is in the whtie ribs and seeds inside. wear gloves to chop jalopenos and do not touch your eyes)</p>
<p>1/4 tsp sea salt and ground chili powder</p>
<p>1 tsp olive oil</p>
<p>ground fresh pepper</p>
<p>1 tablespoon of dried cilantro OR (preferably) a small bunch of chopped fresh leaves.</p>
<p>Juice of one lime</p>
<p>Mix it all up. Place in a covered dish and let sit for several hours to season. Serve with flax crackers, or nacho chips, or as a side to grilled chicken breast, or any other way you serve salsa. (on top of omelets?? YUM!)</p>
