<p>As simple as this recipe sounds, my biggest struggle to date has been to find a green smoothie that I can drink that doesn&#39;t taste &#8230;. well&#8230; GREEN I guess! This is fruity and delicious and oh so green!</p>

<p><span style="font-size: small;"><img align="right" alt="5-12 servings a day" height="226" hspace="5" src="http://www.benaturallywell.com/blog/wp-content/uploads/fruitsveggies.jpg" width="340" />These days I don&#39;t find it difficult at all to personally get my recommended fruits and vegetables. My house is loaded with fresh produce of all descriptions. Just in fruits I have fresh watermelon, honey dew melon, cantaloupe, pears, apples (red delicious and granny smith), naval oranges, tangerines, blueberries, green and red grapes, bananas, a mango, black plums, nectarines, lemons, limes, avacado&#8230; and I am probably missing something. That&#39;s just fresh. I also have several bags of frozen fruits in the freezer (mostly berries).<br />
	</span></p>
<p><span style="font-size: small;">I won&#39;t begin to list all the fresh vegetables I have on hand&#8230; I know I would miss a lot.&nbsp; Health is not, however, about what I eat today (or what my family eats today). health is about what we eat consistently over time. Each day of getting an abundance of fresh whole fruits and vegetables adds up to the grand total that will make a difference over the entire course of your life. It will affect how you feel, how you look, how you move, how you respond to viruses, how you fight off things like cancer. It is important that you pay attention to this now. It is not too late to start eating more fruits and vegetables. <br />
	</span></p>
<p><span style="font-size: small;">As a mom, I found a number of creative ways over the years to get extra servings of vegetables into meals and snacks. You know the obvious ways, i.e. salads, veggie side dishes, and fresh fruit snacks or desserts, but these can get boring or tedious.<br />
	</span></p>
<p><span style="font-size: small;">Here are some things that I have found make a big difference.<br />
	</span></p>
<ul>
<li><span style="font-size: small;">Use grated vegetables in pasta sauces &#8211; When I used a canned pasta sauce I always saute onions, garlic, fresh mushrooms, green and red peppers and add the sauce with or with out browned ground beef, but I ALSO grate several large carrots to put in. Carrots give the sauce a real fresh flavored lift but the tomato sauce disguises the carrot flavor. To this day my family does not know I put carrots in their pasta sauce.<br />
		</span></li>
<li><span style="font-size: small;">Grated vegetables are also good in meat loaf or hamburger patties.</span></li>
<li><span style="font-size: small;">When having spaghetti, grate a zuchini or 2 lengthwise and add it to the long noodles. If you peeled it they may not even know!</span></li>
<li><span style="font-size: small;">Mix grated vegetables (carrots, onions,&nbsp; into salad dressings or sour cream and use as a veggie or corn chip dip.<br />
		</span></li>
<li><span style="font-size: small;">Smoothies &#8211; Using fresh or frozen berries as a base throw in some flax seed oil, a banana, and some melon (water melon, honey dew or cantaloupe) Then for more liquid JUICE 2 large carrots per person, and 1 pear per person, to dump in the blender instead of water!<br />
		</span></li>
<li><span style="font-size: small;"><span>Semi-frozen strawberry yogurt- take a cup of frozen strawberries, 1 cup of strawberry yogurt, 2 scoops of protein powder. (I use URI&#39;s Orange Flavored Multi-meal) and 2 tablespoons on flax seed oil. Blend. Add just enough apple or orange juice (or water) so the berries blend) Pour into bowls. This is MUCH more delicious than ice cream and makes a wonderful breakfast for children who don&#39;t like to eat in the morning.<br />
		</span></span></li>
<li><span style="font-size: small;"><span>Make more casseroles. Tonight I cook chicken breasts. I took 4 large boneless, skinless breasts and chunked them, and baked them in a baking dish for 15 minutes at 375 degrees. The I chopped fresh new carrots, a head of broccoli, a small onion, some green beans, and mushrooms, mixed the whole thing in a bowl with a can of sodium reduced cream of mushroom soup, pored it all over the partially cooked chicken, and stirred it all up. Baked it for another 25 minutes and served it with a large salad of fresh vegetables. I let my family serve themselves but I live with teens. SO&#8230;.</span><br />
		</span></li>
<li><span style="font-size: small;"><span>Make it accessible&#8230; Veggies always fresh chopped and in serving sizes&#8230; with meals I put the large salad out and I get out their favorite salad dressings ad open the top and set it right next to the silverware, I always have</span></span><span style="font-size: medium;"><a href="http://www.benaturallywell.com/blog/2008/07/raw-tomato-salsa/" target="_self"><span style="font-size: small;"> fresh made salsa</span></a></span><span style="font-size: small;"><span> available and they will often scoop that up as a condiment or side dish. </span><br />
		</span></li>
<li><span style="font-size: small;"><span>Make fresh cobblers for dessert instead of pies. Lots of fruit in a very lightly greased baking dish topped with a crumble of equal parts raw oatmeal, almond meal, shaved coconut and a tablespoon of brown sugar. Add a bit of coconut oil to make a crumbly mixture and bake at 350 until fruit is soft and bubbly. If using apples or peaches sprinkle a bit of cinnamon. Berries may require a bit of your choice of sweetener. It is very fast to do something like this up and pop it in the oven after you take the casserole out. It is ready when your meal is done!</span><br />
		</span></li>
<li><span style="font-size: small;"><span>Wrap large lettuce leaves around sandwich filling instead of bread.</span></span></li>
<li><span style="font-size: small;"><span>And don&#39;t forget celery or carrot sticks spread with peanut butter. YUM! </span></span></li>
</ul>
<p>It is good to have the proper tools. I use pampered chef garlic press and veggie peelers, and I have a small electric food chopper, a 7 speed blender, and a Hamilton Beach Juicer, and some good sharp knives. I also have plenty of spices, herbs and seasonings.</p>
<p>The other night my teen age daughter actually ASKED for a vegetarian dinner.&nbsp; I had taken some pita breads, brushed them with olive oil and sprinkled them with garlic powder and sea salt and then baked them until lightly browned at 450 degrees. Then I served some home made salsa, a guacamole made with fresh avocado, juice of one lime, garlic clove crushed, and cilantro, and served both dips with the &quot;chips&quot; and some carrots, celery, cukes, broccoli, and cherry tomatoes.&nbsp; The ONLY reason she asked for this is because she LOVES the &quot;homemade nacho chips&quot;.</p>
<p>My rule of thumb is.. if having something they aren&#39;t crazy about, serve it with something they love!</p>

I truly took my time stretching, and being present for the movement, allowing myself to really feel the muscles extending and enjoying the feel of that. When I felt sufficiently stretched, I did some crunches, some lateral leg lifts, some lunges and some squats. Yes I really did enjoy it! When I was done I felt good, and as I stretched out again I took some time to marvel that a simple change in the way I saw something could make such a profound difference in the way I allowed myself to feel about it.]]></description>
			<content:encoded><![CDATA[<h1>WOW &#8211; A Month into this New Lifestyle!</h1>

<p>It really is crazy how the time goes, and I was keenly aware that today marked the first month of my journey to rehaul my life. I really took the day to reflect, and center myself, to focus on eating well, breathing deeply, and taking inventory of what I&#39;ve accomplished.</p>
<p>I haven&#39;t lost any more weight since that initial 5 pounds but I am not at all concerned about that. I find that in itself a remarkable change for me. At any other time in my life I would be &quot;dieting&quot; and marking my progress with the scales.

<p>If I were to go 2 weeks without losing a pound I would be thrown in to the absolute depths of despair! I would go on a rampage, exercise myself sick, and starve myself and by golly i would conquer that weight!</p>
<p>I am at peace this time that changing weight is easy<span id="more-52"></span>but changing the habits (i.e. lifestyle) that created the weight in the first place requires much more discipline. I believe I said in a different post that I am laying the foundation upon which the rest of my life will be built.</p>
<p>&nbsp;So today, given that I am a month old, I did a lot of reflecting. I realize that I&#39;ve been trying to conquer the exercise demon and I&#39;ve been not really sure why that is such an issue for me. Like everything though, I&nbsp; have come to see that it is my attitude towards exercise that has been holding me back.</p>
<p>Exercise is work. Exercise is not fun. If you ask most people they will tell you they do not like exercise. These are the impressions that we have in our mind. My mind, body and soul resists that which I do not like. I don&#39;t do anything I don&#39;t like any more, and that is the truth about my life now. Luckily I have the luxury of being able to choose in that regard.</p>
<p>So here is how I decided to see exercise&#8230; I am approaching as the new me, and I don&#39;t look at anything the way I used to. That was another life, a different woman. Now I am a person who honors myself, and the people, and beings that I come in contact with every day. A part of honoring myself is not just putting good nutritious nourishment in my body, but also keeping this vessel supple. What good is fuel if it is not expended. Fuel is meant to be used.</p>
<p>So to continue on this theme, and to follow what I have practiced all of my life, I am only going to do what feels good, and honor myself. What a wonderful decision. I felt like a huge pressure had been lifted. I&#39;ve got it all figured out.</p>
<p><img align="left" alt="onica Matthews Yoga" height="262" src="http://www.benaturallywell.com/blog/wp-content/plugins/hot-linked-image-cacher/upload/monicamathewsyoga.com/images/post_card-web.jpg" width="300" />I had also sent away the other day for a book and DVD set on Yoga&#8230; which I have been wanting to explore for a long time. I purchased the set from <a href="http://www.monicamathewsyoga.com/book.html" target="_blank">Monica Matthews Yoga</a> and it came on Wednesday. (The DVD and Manual combined was only $40).</p>
<p>So I hopped on the exercise bike and set it for 20 minutes and started reading. Now let me tell you that I was soon totally engrossed in what I was reading. I find it very interesting that I have been led to explore Yoga given that I am on this journey of connectivity, and exploration of self.</p>
<p>&nbsp;</p>
<p>Yoga seems to be the right thing for me philosophically right now as well.</p>
<p>Before I knew it the timer was going off, and I was still reading. How about that! I pedaled for another 10 minutes so that I could end at a place that made sense in the book, and then I decided that I would like to do some lower body work.</p>
<p>&nbsp;</p>
<p>I imagined how good it was going to feel to be in control of the muscles of my lower body while I stretched each muscle group. I truly took my time stretching, and being <strong>present </strong>for the movement, allowing myself to really feel the muscles extending and enjoying the feel of that. When I felt sufficiently stretched, I did some crunches, some lateral leg lifts, some lunges and some squats. Yes I really did enjoy it! When I was done I felt good, and as I stretched out again I took some time to marvel that a simple change in the way I saw something could make such a profound difference in the way I allowed myself to feel about it. For me it seems to be all about choice. <em>&quot;I am not doing this because I have to, I am choosing to do it because it feels good.&quot;</em></p>
<p>You know I even got on the bike later in the day and did another 20. hehe I wanted to read some more and didn&#39;t want to waste the time!</p>
<p>I feel like I have crossed another small marker on this journey. You may be wondering what the significance of the journal picture is. Obviously this online journal is very motivating to me, and hopefully inspiring to others, but I have not been really tracking exactly what I am eating nor am I writing down my exercises for the day. I think it might be helpful for me in the future if I have some kind of physical progress record, so I started writing down those things today. Won&#39;t it be fun to look back and see what a difference it made that day I decided to love moving my body!</p>

<p>This is the baking dish I used to roast the potatoes. When using stoneware such as this, you don&#39;t use soap to clean, do not have to pre-heat the oven&#8230;. and after a few usages, the vessel is stick-free!</p>

<p>So ON to the recipe! These are the VERY best ever when made with <a href="http://www.peipotato.org/why_pei.asp" target="_blank">P.E.I. NEW Potatoes</a></p>
<p><strong>Potatoes</strong> chunked in to bite sized peices (scrubbed skin on)</p>
<p>Place in a bowl&#8230; sprinkle some extra virgin cold pressed <strong>olive oil </strong>over them.</p>
<p>Use the other half of the <strong>onion</strong> you used for the salad! ;-) chopped</p>
<p>sprinkle some <strong>garlic powder, </strong>and some<strong> oregano, parsley, basil</strong></p>
<p><strong>Turn the oven on 350 degrees F,</strong></p>
<p>Mix the potatoes well with the other ingredients dump in to baking vessel and bake uncovered for 30 minutes or so for single layer of potatoes. Turn once.</p>

<p>What I did this morning.</p>
<ol>
<li>Made a huge veggie <strong><span style="color: rgb(51, 153, 102);">salad</span></strong>,</li>
<li>put veggies and fruits &quot;ready to eat&quot; in containers for <strong>snacking</strong></li>
<li>made a fresh&nbsp; <strong><span style="color: rgb(153, 51, 102);">smoothie</span></strong>.</li>
</ol>
<p>Time in Kitchen 1 hour, 10 minutes. What you see above is an accurate (close to) view of the fruits and vegetable amounts I processed.</p>
<p>2 pounds carrots &#8211; 3 large, peeled chunked and set aside for <span style="color: rgb(255, 102, 0);"><strong>juice</strong></span>,&nbsp; 2 large, sliced thinly in bowl for <strong><span style="color: rgb(51, 153, 102);">salad</span></strong>,, and the rest cut in &#39;sticks&#39; in container for <strong>snacking</strong>.</p>
<p>1 head of celery &#8211; 2 stalks sliced in bowl with <strong><span style="color: rgb(51, 153, 102);">salad</span></strong>, The rest cut in &#39;sticks&#39; in container for <strong>snacking</strong>.</p>
<p>Peppers chunked and tossed in the <strong><span style="color: rgb(51, 153, 102);">salad</span></strong>,</p>
<p>Beets &#8211; washed, tops and thin root removed, 3 set aside for <span style="color: rgb(255, 102, 0);"><strong>juice</strong></span>, the rest in container for later.</p>
<p>onion &#8211; 1/2 chopped in the <strong><span style="color: rgb(51, 153, 102);">salad</span></strong>,. The rest saved for something else.</p>
<p>Beans (Yellow and Green) 1/2 of each chopped for <strong><span style="color: rgb(51, 153, 102);">salad</span></strong>,, the rest topped, snapped and in container in fridge for <strong>snacking</strong>.</p>
<p>Broccoli &#8211; 1 head&#8230;. 1/2 of the florets in <strong><span style="color: rgb(51, 153, 102);">salad</span></strong>, 1/2 the florets in fridge for <strong>snacking</strong> and the stalk set aside for<strong><span style="color: rgb(255, 102, 0);"> juice.</span></strong></p>
<p>Cucumber half &#8211; chopped for <strong><span style="color: rgb(51, 153, 102);">salad</span></strong></p>
<p>1 cup frozen mixed berries in the blender for my <strong><span style="color: rgb(153, 51, 102);">smoothie</span></strong></p>
<p>Apple set aside for <span style="color: rgb(255, 102, 0);"><strong>juice</strong></span></p>
<p>Grapes washed and put in serving sized containers (6) for <strong>snacking</strong></p>
<p>Flax seed oil in blender for<strong><span style="color: rgb(153, 51, 102);"> smoothie</span></strong><strong><span style="color: rgb(153, 51, 102);">.</span></strong></p>

<p>Once the veggies were prepared and salad put away, and snacking sticks strips etc put away, I took my carrots, broccoli stalk, beets, and apple that I had set aside and <span style="color: rgb(255, 102, 0);"><strong>juice</strong></span>d them. Then I put the juice in the blender with the berries and the flax seed oil and made a YUMMY mid morning<strong><span style="color: rgb(153, 51, 102);"> smoothie</span></strong> for my snack!</p>
<p>So now I am ready for the day. this amount of produce will do me 2 days in summer because I am not eating much else. It also encourages my daughter to eat better (she grabs a container of grapes and some carrots for school snack) and my son who LOVES raw fresh green and yellow beans. In the winter I am eating other things as well because the produce is not as nice or as abundant as it is from local farms right now!</p>

<p>1/2 head of brocolli</p>
<p>1 red delicious apple</p>
<p>1/2 cup green grapes</p>
<p><strong>(TIP </strong><strong>-</strong><em><strong> juice spinach leaves sandwiched between pieces of hard fruits or vegetables.</strong></em><strong>)</strong></p>
<p><strong>Pour juice over berries in the blender, add 1 tablespoon flax seed oil and a teaspoon of raw organic honey. </strong></p>
<p><strong>Blend until smooth.</strong></p>

I love my juicer, and as I mentioned in <a href="http://www.benaturallywell.com/blog/2008/07/juicing-for-beginners/"><span style="color: rgb(0, 0, 255);"><u><strong>Juicing for Beginners</strong></u></span></a> it&#39;s not that difficult if you have the right tools. The right tools are a juicer (see Juicing for Beginners for the 2 juicers I recommend), and some fresh fruits and vegetables to juice up.</p>

<p><img align="right" alt="Juicing Fresh " height="225" src="http://www.benaturallywell.com/blog/wp-content/uploads/juices.jpg" width="300" />If you are new to juicing, it is VERY easy to get fresh yummy juice.</p>
<p><strong>Wash fruit&nbsp; well</strong> (I like mine from the refrigerator so my juice won&#39;t be too warm). I recommend that for fruits and vegetables that you do not have to peel (apples, grapes, pears) buy organic. Juicing concentrates everything including whatever washing doesn&#39;t get off.</p>
<p><strong>Peel </strong>the fruits and/or vegetables you would normally peel (oranges, pineapple etc)</p>
<p><strong>Chunk them into large pieces</strong> and <strong>feed them into the chute</strong>. <strong>Use the plunger</strong> provided to push the fruit into the juicer. Juice comes out one end into a cup of some kind and pulp comes out the other and is caught in some kind of receptacle.</p>
<p>Drink the juice right away so you get the full advantage of enzymes, vitamins and minerals all of which begin to degrade (oxidize) as soon as they are exposed to air.</p>
<p>Clean up will vary depending on the machine and needs to be done as soon as you&#39;ve finished your juice. Small sticky fruit bits will stick like glue if left over a few hours without soaking.&nbsp; I have a rule&#8230; don&#39;t buy a juicer that takes more than 5 minutes to clean!</p>
<p>So let&#39;s get to some of the combinations that are great for beginners. (If you&#39;ve never had &#39;greens&#39; then add them slowly. Most people find the taste needs to be acquired.</p>

<p>There&#8230;..That should get you started ! I try to do at least 16 ounces of freshly juiced drinks every day. Some days I am totally on the fly though. I am sure you know what days I mean&#8230; :-) when I absolutely can NOT get my fresh juice made I can still get all of the goodness on fresh.</p>
<p>I have found a WHOLE FOOD RAW (dehydrated at less than 100 degrees) mix of picked fresh, organic fruits and vegetables. This juice has been tested at every stage for quality. I am convinced that it is a VERY good alternative to fresh made juice. In the winter (at least here in Canada) it likely has more freshness and enzymes than the produce we can get at the grocery.</p>
<p>It&#39;s called <a href="http://www.uriinternational.com/BeNaturallyWell" target="_blank">URI International</a>. They have a wonderful line of products including some toxin free cleaners and an organic coconut oil (more on that later) but the two products that caught my raw juicers eye were The FEAST and Beyond Berries.</p>

A month supply of the FEAST (2 servings a day) is under $50 which of course is what I spend in a week on fresh produce for my juicing. I live on Canada&#39;s east coast&#8230; we are not exactly overflowing with diversity of any kind here. I don&#39;t even KNOW a vegetarian! (no I am not kidding!) There are no juice bars&#8230; oh there may be one opened up over there at the Goodlife Fitness Center. Seems to me that the last time I was there they had some such, and there could very well be the odd juice type franchise popping up here or there, but our entire province only has 900,000 or so people, so there really isn&#39;t a huge market out of the very small percentage of people who might be into all this &#39;fringe&#39; health stuff.</p>
<p>Anyway&#8230; I digress. I started this journey (have been led?) a while ago. Juicing, just vegetarianism, veganism, and raw foodism, has me intrigued. So I dug around and read websites, and blogs, articles and books. I am a &#39;sometimes&#39; reader of Mike Adams over at NaturalNews.com (it used to be News Target) and he likes the whole juicing thing. At any rate, I&#39;ve discovered that when it comes to juicing, just like anything else, there&#39;s a whole spectrum of people. On one end&#8230; where I used to be, there&#39;s the person who buys &quot;Florida Sunshine&quot; in a carton and drinks a small glass every day with breakfast. On the other end of the spectrum there are the &quot;<a href="http://juicefeasting.com" target="_blank">Juice Feast</a>&quot; proponents who do 92 days at a time drinking ONLY 100% fresh fruit and vegetable juice, pressed through their kitchen counter top juicer and consumed immediately. Up to 4 gallons a day of fresh pressed juices with no solid foods what so ever for 92 full days.</p>
<p>Apparently the health benefits of the &quot;Juice Feast&quot; are huge, although I may never be able to give you a first hand account. Admittedly, my blog articles are aimed at the &quot;in between&quot; crowd which is where I seem to be planted at the moment. I&#39;ve been fond of saying that this journey of mine is not a religion. It&#39;s simply a day by day choice. while many people might find that non-committal (and they would be right) it suits my lifestyle, and is still a radical shift from how I survived up until a couple of weeks ago.</p>
<p>SO&#8230; back to juicing&#8230;. oh yeah &#8230; for BEGINNERS.</p>
<p>There are so very many reasons why juicing fresh fruits and vegetables is really good for you. I am going to list just a few of them for you.</p>

If you&#39;ve never had fresh green juice before I will recommend you start with romaine lettuce, celery, cucumber, spinach and maybe some alfalfa or broccoli sprouts. These are milder. I found (and still do) that green juice is an acquired taste. I will juice a couple of apples with mine or some carrots (or both) most days.</p>
<p>Other vegetables that are great for juicing are beets, red cabbage (one of my faves), all kinds of lettuce, zucchini, tomato, yellow and green beans&#8230; just about any vegetable you can imagine. I do not like the starchy veggies juiced (potatoes, yams, squashes) but you can try and see what strikes you.</p>
<p>For fruit, lots of whatever is in season.&nbsp; Go organic whenever possible but if you find it is too expensive, save the organic for those fruits and vegetables that are hard to wash (broccoli, cauliflour, lettuce etc) or that you are not going to peel.</p>
<p>Drink the juice right out of the juicer, or add it to a smoothie, but DO drink it right away, as the digestive enzymes and oxidation will begin breaking down the nutrients. If you must make it and save for later, then put it in mason jars (GLASS) and refrigerate no more than 24 hours!</p>
<p>Go for ALL the colors Red, Yellow, Green, Blue and purple, and orange and mix them up. Don&#39;t be afraid to experiment.</p>
